Aged Rib Roast

Bring the rib roast to room temperature two hours before roasting.

Preheat oven to 375.

Put Worcestershire sauce on the fat cover then cover that with salt. You may sprinkle additional sauce.

You want the roast to hit the oven wet, when the heat hits it, the salt becomes ceramic and enables the heat to penetrate the rib evenly.

Cook for 1 1/2 hours. Remove when a thermometer reads 105º. That's pretty rare. medium is 120º.

Remove from oven and let it rest a minimum of ONE HOUR.

Mr. Clairborne suggests using Knorr or Lowry's Au Jus and making it according to the package and get it real hot.
