1 pound peeled de-veined shrimp
1 14.5 oz can diced tomatoes
2 Tbsp olive oil
1 bunch of fresh chopped parsley (1/4 reserved for garnish)
2-3 cloves diced garlic
Salt and pepper to taste
Juice of one large lemon
2 oz crumbled feta cheese
1/2 pound linguine noodles or pasta of choice

Optional: (and/or)
1/4 chopped onion
1/4 chopped red pepper
chopped mushrooms

Preheat oven to 350º
Boil salted water in a tall pot for noodles.
In an ovenproof skillet over medium high heat, add oil, then saute shrimp until two thirds done. (Will start to curl.) If using additional ingredients, remove pink shrimp and reserve. Add additional olive oil if needed and saute vegetables until softened, then add garlic, sautéing quickly so you don't burn the garlic. Add back shrimp and add drained can of tomatoes and most of the parsley. Warm through then take off heat. If sauce looks too dry, add a little of the reserved tomato juice. Sprinkle shrimp mixture with crumbled feta and put in the oven.

Prepare noodles per package and drain. Bring out baked shrimp mixture. I like to dump the noodles back in the empty pot they were boiled in and then the shrimp mixture on top and mix quickly, adding lemon juice at the end. Serve immediately with fresh ground pepper and parsley garnish.

This is so easy and versatile. Sometimes I substitute lime for the lemon juice, cilantro for the parsley and rice for the pasta and you get a whole other vibe.
