1 cup molasses 2 tsp Cinnamon
1 cup brown sugar 2 tsp ginger
1 cup butter pinch of salt
1 cup boiling water 3 to 5 cups flour
2 tsp baking soda

Directions:
Directions:
Preheat oven to 350
Melt butter and stir with brown sugar and molasses until mixed well. Dissolve baking soda in 1 cup of boiling water and add to mixture, stirring it in. Add flour and spices and stir and mix with hands until mixture handles like a dough that does not stick to your hands. Kneed and roll out to 1/4 inch thickness. Cut with cookie cutters. Bake until done. Check after 10 to 12 minutes in the oven

I met Bertha when I worked in Bay Roberts. Her husband who was sick and bedridden was my client. Bertha had so much energy even in her 80s. She loved her family and friends and she dearly loved to bake.When you would enter the home your sense of smell was awakened with cookies such as these that she had baking in her oven
