2 slices chopped bacon
1/2 cup chopped onions (medium sized onion)
1/2 cup chopped celery
3 tablespoons coarsely chopped sweet bell pepper
2 cups water
2 cups pared diced potatoes (1/2 inch pieces)
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/2 teaspoon crumbled leaf basil
1 bay leaf
1 cup skim milk
2 packages frozen corn kernels, partially thawed
1/2 cup (2 oz.) shredded sharp cheddar cheese
Fresh chopped parsley (optional)

1. Saute bacon in a medium-size nonstick saucepan over medium heat until crisp. Remove bacon with slotted spoon onto a paper towel to drain. Drain all but 1 teaspoon of fat from saucepan.

2. Add onion, celery, and green pepper to saucepan. Sauté over medium heat until golden brown for approximately 5 minutes. Add water, potatoes, salt, pepper, basil and bay leaf and bring to a boil. Then lower heat and simmer for 10 to 15 minutes or until potatoes are tender.

3. Stir in milk and corn. Cook for 5 minutes or until heated thoroughly. Stir in cheese until melted. Remove bay leaf. Enjoy!
