Pie Crust:
3/4 cup all-purpose flour
6 tablespoons sugar (brown, white or half of each)
1 tablespoon pumpkin pie spice
1/4 tablespoon salt
6 tablespoons unsalted butter

Pie Filling
3 pounds (11 small) Golden delicious apples, peeled and cut into 1/4 inch slices
1/4 cup all-purpose flour
1 1/4 cups sugar
1/4 cup +2 tablespoons water
3 tablespoons unsalted butter

Directions:
Directions:
Pie crust: Use a pastry cutter or two knives, cut ingredients together until topping is crumbly. Set aside.
Filling: Mix apples and flour and set aside.
Combine 1/4 cup water and sugar in sauce pan (do not stir). Bring to boil until color is medium amber (about 5 minutes). To avoid sticking to the pan, use a wet pastry brush and brush caramel up the sides of the pan. Remove from heat and add butter and 2 tablespoons water. Stir until smooth and pour over apples. Let stand 10 minutes. Pour apples into pie shell and sprinkle topping over apples. Bake one hour and 10 minutes at 375°.
