1 1/2 cups water
1 cup sugar
1 tablespoon butter
1/4 teaspoon salt
2 tablespoons cornstarch (OR) 2 rounded tablespoons flour dissolved in water
2 eggs, separate yolks and whites
1 lemon zest and juice
1/4 teaspoon baking powder

Directions:
Directions:
Mix water, sugar, butter, salt and bring to a boil. Slowly add 2 tablespoons cornstarch or 2 rounded tablespoons flour dissolved in water. Add beaten yolks of two large eggs, (add a little of the hot mixture to egg yolks) and then return to pan, stirring constantly until thickened. Add juice of lemon and zest of one lemon after mixture is thick. Boil slowly, stirring until cornstarch taste is gone. Beat egg whites until stiff, (add 1/4 teaspoon baking powder to meringue). Spread over high and brown in slow oven.

This recipe was shared from Gaye Strickland, Lillian Riggs' step-granddaughter. She lived at Faraway Ranch with her parents to help Lillian. Some of her fondest memories of the ranch were the Sunday dinners. She said they always had several guests staying in the guest cabins. Sunday dinners, they were always fried chicken and country gravy with mashed potatoes of course. She said she loved these big dinners.
