1 cup sugar
5 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 egg yolks, slightly beaten
3 tablespoons butter
1 teaspoon grated lemon rind
1/3 cup lemon juice
1 9" baked pastry shell

Directions:
Directions:
Combine sugar, cornstarch, and salt in a sauce pan, add milk gradually and stir until smooth. Cook over medium heat stirring constantly until smooth and creamy. Stir in small amount of hot mixture into your egg yolks, gradually combine egg yolks with remaining hot mixture. Continue cooking stirring constantly for about 5 minutes. Remove from heat and add butter, lemon rind, and lemon juice, blend thoroughly. Pour hot filling into baked pie shell and cover with the meringue spreading to the edges to seal. Bake at 350° for 12 to 15 minutes or until lightly browned.

This lemon cream pie was my great, great grandmother's and she was just a good old-fashioned cook. The creaminess of the pie is quite different from your everyday lemon pie, you will be glad you tried it.
