1 1/2 cups of sugar
7 tablespoons cornstarch
2 1/2 cups boiling water
1/8 teaspoon salt
5 tablespoons lemon juice
Zest of one lemon
1 tablespoon of butter
4 eggs - separated

Directions:
Directions:
Mix sugar and cornstarch, add 2 1/2 cups boiling water and salt, cook until thick 8 to10 minutes. Add 4 egg yolks, 5 tablespoons of lemon juice and zest of lemon. Add 1 to 2 tablespoons of butter, cook until thick about 5 minutes. Cook on low heat. Pour hot filling into hot pie shell, it's best to put your meringue on while filling is hot. Be sure to seal your meringue all around your pie.

Gladys made the best pies I've ever eaten. A cup of coffee made in her 4 cup drip pot was better than any coffee Starbucks could make. Along with a slice of her lemon pie, you were in heaven.
