1 1/2 cups vegetable oil
2 cups sugar
4 eggs
1 tablespoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 teaspoon salt
2 teaspoons baking soda
2 cups King Arthur unbleached all purpose flour
3 cups finely grated carrots
1 1/2 cups chopped pecans or walnuts

Frosting:
1 stick cup butter
1 (8 oz.) cream cheese
1/4 teaspoon salt
2 teaspoons vanilla
2 1/2 to 3 1/2 cups powdered sugar
Milk or cream

Directions:
Directions:
Beat together the oil, sugar, eggs and spices. Mix flour with the baking soda and sift in. Add the carrots and nuts and mix until just blended. Pour the batter into two 9" round layer pans, or a 9"x13" pan. Bake at 350° for 35 to 40 minutes. Cool completely.

Frosting:
Combine butter, cream cheese, salt, vanilla, powdered sugar and enough milk or cream to adjust consistency of frosting.
