200 lb potatoes, boiled and diced
6 lbs carrots,finely diced
10 lbs celery, finely diced
5 lbs onions, finely diced
2 1/2 lbs red peppers, finely diced
2 1/2 lbs green peppers, finely diced
1 gal mayonnaise
1/4 cup vinegar
3 cups sugar
3 cans evaporated milk
1 tbsp salt
2 1/2 tbsp mustard
1/2 box celery seed (~)
1 tsp black pepper (~)

Directions:
Directions:
Make sure the potatoes are cold to avoid fermentation. Toss potatoes, carrots, celery, onions and peppers. Combine mayonnaise with remaining ingredients; then gently toss with potatoes.
