1 cup chopped onion
1/2 cup butter
1/2 cup flour
3 T corn starch
1 tsp paprika
1 tsp salt
1/2 tsp white pepper
2 quarts milk, heated
2 quarts chicken broth, heated
11/2 cups chopped carrots
1/2 cup chopped celery
2 cups sharp cheddar cheese, shredded
1/2 cup chopped parsley

Directions:
Directions:
Cook the carrots and celery until tender. Drain. Saute onion in melted butter until transparent. Add flour, cornstarch, paprika, salt and pepper. Cook over low heat for about 10 minutes. Add hot milk and chicken broth, cook stirring until thickened. Add vegetables to milk mixture. Just before serving stir in cheese and parsley.
