1 clove garlic
1 cup sliced red onion
1/2 small green pepper, thinly sliced
2 tablespoons salad oil
3 cups zucchini squash, sliced half-inch
1 (14 1/2 oz.) can pear-shaped tomatoes
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated parmesan cheese

Directions:
Directions:
Sauté garlic, onion and pepper in hot oil. Add zucchini and cook for 2 minutes. Place in a shallow casserole dish and add tomatoes, salt and pepper. Bake at 350° for 20 to 25 minutes or until squash is tender. Sprinkle with cheese and cook until cheese melts.
