3 or 4 fresh eggplants
1 chopped onion
1 to 2 pods chopped garlic
1 chopped bell pepper
Seasoned or plain breadcrumbs
Butter
4 or 5 slices day-old French bread
3 pounds fresh Biloxi shrimp
1 egg beaten
Cayenne (optional)
Salt and pepper

Directions:
Directions:
Peel eggplant, take out seeds, quarter and boil until tender in salt water then drain very well pressing with your hands to get out as much of the liquid that you can. In a cast-iron skillet, sauté all the vegetables until wilted. Add well-drained eggplant and stir. Then add shrimp, stir well and cook just 'till shrimp turn pink. Then add French bread (that has been soaked in small amount of water). Squeeze out liquid from the French Bread before adding to the shrimp mixture. Stir well and add one beaten egg, salt, pepper and cayenne to taste. Pour into a greased casserole dish and top with breadcrumbs and dot with butter. Bake until hot and bubbly.

Azzie's eggplant and shrimp is my very favorite dish. When I was growing up, Azzie fixed this dish often as it was one of the family's favorite. If you like eggplant and you like shrimp you're sure in for a treat! My brother, Phillip, made this dish as good as anyone. Some of my favorite memories of Azzie was crawling up in her bed and she would read to me from her Bible but sometimes she would tell me stories that would make my hair stand on end!!The thing is, I never knew Azzie to tell a lie, so I believed every word she said! You wouldn't believe the stories I could tell you that she told me. Your hair would stand on end too!!!
