Vegetable oil
2 eggs lightly beaten
1/2 cup ham sliced in small pieces
1/4 cup green peas fresh or frozen
4 cups cooked rice
2 to 3 tablespoons soy sauce
2 green onions

Directions:
Directions:
Heat 1 tablespoon oil in wok or frying pan. Scramble the eggs and break them into small pieces. Remove and set aside, repeat with the peas, making sure the oil is hot. Drizzle 2 tablespoons of oil into pan then stir-fry the rice until it is very hot. Add the eggs, ham and peas then add the soy sauce and green onions. Stir fry until hot, mixing well. This recipe is ideal for leftovers. Leftover rice, meat and carrots, peas. You can also use, bacon, bean sprouts, celery, etc.
