Rice:
1 cup rice
2 1/2 cups boiling water
1 teaspoon salt
1 tablespoon butter

Cheese Sauce:
2 tablespoons butter
2 tablespoons flour
1 cup milk
3/4 (cup) or more grated Longhorn or cheddar cheese
Pinch of salt

Directions:
Directions:
Place rice, salt and butter in pan with boiling water and cover with tight lid. Simmer 20 minutes or until light and dry. Sauce: Heat butter and flour and salt. Add milk and cheese. DO NOT BOIL heat just enough to melt the cheese. Heat 1 pint tomatoes, and add salt, pepper, 1 teaspoon butter, and a little bit of sugar. When ready to serve, add rice to cheese sauce and place on platter. Pour tomatoes mixture on top.
