I like to soak my chicken in salt water for a few hours in the refrigerator, also known as brining. Soaking in buttermilk for 24 to 48 hours is great too. Pat dry and shake chicken in a brown paper bag with flour salt and pepper. Fry in hot oil like Crisco letting it cook completely on one side before turning. Drain well. Azzie said that the key thing when frying chicken is to make sure your oil is good and hot. When Azzie fried chicken, she threw a wooden kitchen match in her oil to determine when it was hot enough. When the match lit, she was ready to fry. She always used a paper bag to put her flour, salt and pepper in.

Another way to fry chicken is Marie Lorio's way. She would soak the chicken in canned PET milk overnight. She also used a paper bag to put her flour in. To the flour she added salt, pepper and cayenne pepper. Her family loved her fried chicken as it had a bite that made it extra special. It was the number one dish her family requested.
