6 or 7 fresh zucchini
1/2 to1 package sausage
1/2 onion
1 cup cheese of your choice (I like Swiss and Jack)
1 egg
Dash Tabasco
Parmesan cheese

Directions:
Directions:
Split your zucchini lengthwise, scoop out center leaving about 1 inch to make a boat; chop scooped out zucchini lightly. Fry up sausage of your choice and crumble, drain well. Shred finely 1/2 onion. In a bowl, combine sausage, zucchini, onion, and 1/2 cup to 1 cup of cheese of your choice. Add salt and pepper to taste and a dash of Tabasco. If you wish, mix with hands. Spray a baking sheet with Pam, spray zucchini boats lightly and place on baking sheet. Take filling and place mixture in each half of zucchini, sprinkle with a bit of Parmesan cheese. Cover with foil. Bake at 400° for one half hour or so until zucchini boats are tender.
