Cut lean meat into strips about 2 inches wide, 7 or 8 inches long or longer and as thin as possible.

Salt-and-pepper and hang to dry. There are many ways to process it. Hang in a dry place. Store in a muslin bag.

The best jerky is made in the summertime when the air is warm and dry. A screened porch is good if the sun comes in. Brannick Riggs Family 1879.
