4 (8 oz.) packages cream cheese
1 1/2 cups sugar
4 eggs
1 tablespoon lemon juice
1 teaspoon vanilla

Crust:
10 regular chocolate or regular graham crackers
3/4 cup ground pecans
3 tablespoons sugar
1/2 teaspoon cinnamon
6 tablespoons unsalted butter (at room temperature)

Optional:
Fresh fruit

Crust Preparations:
Place graham crackers in a large plastic bag and crush with rolling pin until mixture resembles cornmeal. Place in bowl.

Add pecans, sugar and cinnamon and mix well. Add butter to mix. Outline a circle of parchment paper over a 9" spring form pan, cut parchment paper to size and place on the bottom of the pan. Scatter crumbs over bottom pan, use plastic wrap to press mixture evenly over bottom and up sides of pan. Lightly butter sides of pan, right above the crust. This helps to release the sides and prevents cracking. Refrigerate until ready to use.

Cheesecake Filling:
Beat cream cheese in large bowl with electric mixer until blended and smooth. Gradually blend in sugar. Add 1 egg at a time, beating well. Add lemon juice and vanilla. Blend well and pour into crust lined pan. For best results, place pan in a water bath to bake.

Bake Cheesecake at 350º for 55 minutes. Remove to wire rack to cool. Refrigerate 12 hours or overnight. Garnish with your choice of fresh fruits and whipped cream.
