6 quarts (3 beer flats) peeled chopped tomatoes
1/4 jar garlic (or 4 tablespoons garlic powder)
2 tablespoons crushed dried basil
8 tablespoons chili powder
6 fresh finely chopped jalapeņo peppers
24 oz. (6 small cans) diced green chilies
2 small diced onions
1/2 cup white vinegar
Salt and pepper to taste
2 tablespoons ground oregano or to taste
1 tablespoon cumin or to taste
1 tablespoon cilantro or to taste
1 can tomato paste (optional)
1 can beer (optional)

Directions:
Jalapeņos may be seeded first to reduce heat. Combine all ingredients. Makes about 11 1/2 pints. Process for canning.
