1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 oz.) jar drained pimentos
3 tablespoons chopped fresh parsley
3 tablespoons chopped green onion
3 minced cloves garlic
1 teaspoon sugar
1/2 teaspoon each salt and pepper
3/4 teaspoon dried whole basil
1 (8 oz.) 5 1/2"x2"x1" block cheddar cheese chilled
1 (8 oz.) chilled cream cheese

Directions:
Directions:
Shake all ingredients (except cheeses) in a jar for the marinade. Cut block of cheddar cheese in half lengthwise. Cut across into 1/4 inch thickness. Repeat with cream cheese. Arrange cheese slices alternately in a shallow baking dish. Pour marinade over cheese. Cover and refrigerate for eight hours. Serve with crackers.
