2 egg whites
4 ½ oz. sugar
2 ½ oz. semisweet chocolate, softened
4 ½ oz. ground, unblanched almonds
½ tsp almond flavoring

You will also need melted butter for brushing your palms and blanched almonds for decoration.

Beat egg whites with sugar until well blended, mix in softened chocolate, stir well, add ground almonds and almond flavoring, and stir again till well mixed.

With the buttered palms of your hands roll a heaped tablespoon into a small ball, place on a well buttered cookie sheet, and decorate in its middle with half of a blanched almond.

Bake in a preheated oven at 350 degrees for about 10 minutes or until the surface of the cookies looks dry. Do not over bake. Remove cookies immediately from the cookie sheet and cool them on a wire rack.
