1/2 c evaporated milk, warmed
1 tbsp instant coffee
2 c flour
1/4 c sugar
4 tsp baking powder
1/4 tsp salt
1/3 c butter or margarine chilled and cut into pieces
1 tsp vanilla
1/2 c dried dates or raisins
1 tbsp sugar

Preheat oven to 425º (220ºc). Lightly grease large baking sheet.

Combine evaporated milk and instant coffee in a small bowl; stir until coffee is dissolved. Combine flour, 1/4 c sugar, baking powder and salt in a large bowl. Cut in butter with pastry blender until mixture resembles coarse crumbs. Stir in coffee mixture, dates and vanilla until mixture forms soft dough.

Knead 5 to 7 times on lightly floured surface. Gently pat or roll to 1/2-inch thickness. Cut with biscuit cutter or into wedges. Place on prepared baking sheet. Sprinkle 1 tbsp sugar over tops.

Bake for 11 to 12 minutes or until lightly browned. Serve warm.
