2 lbs. sugar (4 cups)
8 eggs
4 oz. citron peel cut fine
Rind of 2 lemons, grated
½ tsp. cloves
1 tsp. nutmeg
A little white pepper
2 handfuls of chopped almonds
2 lbs. flour (8 cups)

Directions:
Directions:
Stir 2 lbs of sugar with 8 eggs for 15 minutes (beat until light and lemon-colored about 10 minutes). Add remaining ingredients. Knead to a stiff dough. Roll as thick as your thumb. Cut into small nut shapes (I use a 1” round cutter; from a doughnut cutter) Put on greased pans for 24 hours. Before baking, turn them over. Bake in upper part of over at 340 for approximately 15 minutes. Do not allow them to brown. Makes approximately 15 dozen.
