1 1/2 lbs lean ground beef
1/4 c flour
2 eggs
4 qts water
6 beef boullion cubes
1 tsp oregano
1 medium onion chopped
3 carrots chopped
1/2 c rice

Directions:
Directions:
Combine beef, flour, eggs, and 2 c boullion (water with boullion cube). In an 8 qt kettle bring remaining broth, oregano and onions to a boil; reduce heat to low. Quickly shape meat mixture into balls about 1 1/2 inches in diameter; as shaped, drop into stock. Simmer, uncovered for 5 minutes. Add carrots and rice. Simmer, uncovered, for 20 min.

You may add peppers to this if you want it more spicy. Lime is good on it like in Pozole.
