1 c butter or margarine
2 c sugar
Grated rind of two large oranges and one lemon
2 eggs
2-1/2 c sifted flour
2 tsp baking powder
1 tsp soda
1/2 tsp salt
1 c buttermilk
1 c finely chopped walnuts
Juice two large oranges
Juice one lemon
2 tbsp rum

Cream butter; gradually add 1 c sugar, and beat until light. Add fruit rinds, and eggs one at a time, beating thoroughly after each. Add sifted dry ingredients alternately with buttermilk, beating after each addition until smooth. Fold in nuts. Pour into greased 9" or 10" 2-quart tube pan. Bake in moderate oven, 350ºF., about one hour. Strain fruit juices into saucepan. Add remaining 1 c sugar and rum; bring to a boil. Remove cake from oven, and pour syrup slowly over cake in pan. If all the liquid is not absorbed, pour remainder on later. (This is a moist cake, so it must be eaten with a fork.)

You should let this cake stand a day or two before serving it.
Keeps well and is absolutely delicious. Good choice during the holidays.
