1/2 c bourbon
1/4 c honey
3 tbsp low sodium soy sauce
1 tbsp canola oil
1/2 tsp ground ginger
1/4 tsp crushed red pepper
1/4 tsp freshly ground black pepper
4 (4-ounce) boneless center-cut loin pork chops (about 3/4" thick)
2 peaches, halved and pitted
Cooking spray

1. Combine bourbon, honey, soy sauce, canola oil, ginger, red pepper and 1/4 tsp black pepper in a large bowl. Add pork and peaches, toss well to coat. Marinate one hour.

2. Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Remove pork and peaches from bowl, reserving marinade. Place pork and peaches on grill pan; cork four minutes on each side or until pork is done.

3. While pork cooks, place marinade in a microwave-safe bowl, microwave on HIGH 2 minutes. Spoon over pork and peaches. Serving size 1 chop, 1 peach half, and 2 tbsp sauce.
