1 lb. chicken breast tenders
1/2 cup low-fat buttermilk
1/2 cup crushed cheese crackers
1/4 cup seasoned bread crumbs
1 tsp. paprika
1 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. salt
Cayenne pepper, to taste
1 1/2 T. Vegetable oil

Put chicken and buttermilk in Ziploc bag and refrigerate 30 minutes or overnight.
Preheat oven 400º.
Combine cheese crackers, bread crumbs, paprika, garlic powder, chili powder, salt and cayenne pepper in a large Ziploc bag. Drain chicken, discarding liquid, and add a few tenders to bag at a time, shaking to coat. Repeat with remaining chicken.
Cover bottom of shallow baking pan with oil. Add chicken in single layer.
Bake 10 minutes on each side, or until chicken is cooked through.
Serve with ranch dressing or salsa for dipping.
