1/3 cup pearl tapioca
1 cup water
2 cups scalded milk
2 eggs- separated
1/4 cup sugar
1/4 tsp. salt
1/4 tsp. vanilla

Directions:
Directions:
Soak tapioca in cold water over night. Add scalded milk and tapioca mixture in double boiler and cook until transparent by sure to stir in a figure 8 so the mixture does not burn. Add salt and beat eggs and remaining 1/4 cup sugar; cook until thick then remove from heat and fold in stiffly beaten egg whites.

This recipe uses the old fashioned pearl tapioca and can be found in the Midwest. If you like tapioca this is a really good recipe, but it takes a long time to cook.
