2 lbs yellow or zucchini squash ( can used a variety of each)
4 Tbsp butter
2 medium onions, sliced
2 cloves garlic, mashed
1 cup milk or cream
1 cup bread crumbs
1 lb cooked drained and crumbled bulk pork sausage
5 eggs, lightly beaten
1 1/2 cups grated cheddar cheese
1 cup chopped pecans
Salt and pepper to taste

Topping:
4 tsp melted butter
1/2 cup bread crumbs
1/2 cup chopped pecans

Directions:
Directions:
Preheat oven to 350º F. Grease 2 quart casserole. Cook squash whole until soft. Drain and mash. Melt butter in pan add onions and garlic cook until soft. Add to squash with remaining ingredients mixing well. Pour into casserole. Combine topping items and sprinkle over casserole. Bake uncovered for 30 minutes. May be frozen and reheated.
