2 1/2 Cups All-Purpose Flour
1 Teaspoon White Sugar
1 Teaspoon salt
2/3 Cup Water
1 Egg
2 Tablespoons Butter, melted

Optional:
1 Egg, well beaten for egg wash
Sesame Seeds, for egg wash
Salt, for egg wash

Directions:

Preheat oven to 400 ºF. In a large bowl, stir together, flour, sugar and salt. Add water, egg and melted butter; mixing well to make a stiff dough. Knead until dough is smooth, approximately five (5) minutes. Divide dough into ten (10) balls. Roll each ball on lightly floured surface until paper thin. Place on ungreased baking sheet. Brush with egg wash, if using, and sprinkle with sesame seeds and salt. Bake in preheated oven for 10 to 12 minutes, until browned.

Note: If preferred, these can be made in a dry skillet over medium-high heat, turning as they brown, to desired doneness.

This is a classic Armenian and Turkish flat bread used as a side accompaniment. Excellent when made fresh for kebabs. Slightly under-cooking them makes a tender, flexible bread suitable as a gyro. Letting them sit over night in the air, one can break them up into a chip of sorts, forming homemade pita chips.
