Using a mortar and pestle, add the garlic and salt. Pulverize the two into a creamy paste and mix it into the mayonnaise. The sauce can be left thick, or, optionally, thin it out with lemon juice and water, adding extra salt if needed. Goes excellent as a glaze on grilled chicken, grilled pork chops, or as a dipping sauce for fried foods. Has ceaseless applications.

Keep in the refrigerator for no more than seven days. Any product made with fresh garlic can develop botcholism bacteria and should bee eaten quickly.

Any number of herbs or spices can be added to this to create a nearly ceaseless number of sauces for all kinds of applications. Do not be afraid to add other kinds of thinning liquids, like liquors or lime juice.

One variety I enjoy is lime juice and chipotle powder, which goes really well on a grilled vegetable sandwich.

Dill and lemon juice make a great sauce for salmon, especially with capers and minced dill pickles, which makes tartar sauce.
