1 Cup Sugar
1/2 Cup Shortening
1/2 Cup grated Zucchini
1/2 Cup Crushed Pineapple
1 egg
2 Cups Flour
1 tsp. Baking Powder
1 tsp. Soda
1 tsp. Cinnamon
1/2 tsp. Salt
1 tsp. Vanilla
1/2 Cup Dates, raisins, nuts or chocolate chips
Directions:

Mix together all dry ingredients. Cream together sugar, shortening, Zucchini, pineapple and egg. Add sifted dry ingredients to cream mixture. Fold in dates, raisins, nuts or chocolate chips or combination of any 4 of them. Bake 350º for 10 minutes or until lightly browned.
