8 oz Steamed crab meat
3 oz Cream cheese softened
1 Tbs Finely chopped onion
Dash Salt
2 Tb Butter softened
¼ C Mayonnaise
1 Egg Yolk
¼ tsp Prepared mustard
3` English Muffins split




Directions:
Directions:
Stir together the crab and mayonnaise and set aside.
Beat together cream cheese, egg yolk, onion, salt and mustard until smooth & creamy.
Spread muffins with butter or margarine then the crab mixture. Top with cream cheese mixture.
Place on baking sheet and broil 5-6 inches from heat for 2-3 min until bubbly and golden
For a party dish, use small loaf of French or Italian bread sliced ½” thick
I usually double this recipe – using 1# crab
