35 lbs. pork shoulder
15 lbs. chicken or turkey
5 lbs. lean beef roast
1 dozen onions
1/4 cup salt
1/8 cup pepper
1/3 cup summer savory
2 tbsp. ground cloves
5 or 6 bay leaves

Directions:
Cover meat with water. Cook about 4 hours or until meat is well cooked.. Let cool overnight. Next morning remove bones, skin, fat & unsavory items, reserving all liquid from meat. Next, cut meat into large cubes & add diced onions & seasonings. Add all liquid & enough water just to cover all ingredients. Bring to boil, in large pot, stirring frequently & let simmer 20 min.. Let cool & skim off any fat. Next morning make 40 pie crusts & fill with meat mixture. Bake at 425 º for 30 min.

3 day project as it takes 2 over-nights to cool such a large amount of meat.

This is an adapted recipe, by me, beginning from My sister-in-law's [Colette's] Mother [A Francophone Lady from the Province of Quebec], to a recipe I found, " TOURTIERE", from Le Temps des Fetes and finally a few extras of my own. This recipe is a very special Treat.
