1 lb lean ground beef (or turkey)
1 large onion, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
3 jalapenos, chopped
3 cloves of garlic, minced
1 can whole kernel corn, drained
1 can black beans, drained and rinsed
1 can red beans in chili sauce
2 14oz cans diced chili-ready (or any kind) tomatoes
1 can tomato sauce
1 tbsp chili powder
1 tsp cumin
1/2 tsp oregano
Salt and pepper to taste

Brown meat, drain and set aside
In a large sauce pan, saute onions, garlic, peppers, jalapenos and spices
Add beef and remaining ingredients
Simmer on low heat, covered, for at least 30 minutes, stirring occasionally
Add water by the half-can if a thinner consistency is desired

Serve over pasta, rice, couscous, or with tortilla chips. Dress it up with shredded cheese, sour cream, hot sauce, etc. Freezes well!
