1- chicken---cut in 9 pieces
2 tbsp. butter
10 oz. pearl onions---peeled
4 slices bacon---cut in 1" pieces
1 tbsp. flour
3/4 cup chicken stock
1 bouquet garni [parsley, thyme & bay leaf ]
---garlic optional
2 cups red wine
salt & pepper
1 tbsp. red wine vinegar

Directions:
Brown the chicken in the butter in a frying pan over moderate heat. Place chicken in heavy dutch oven.
Brown the onions & bacon in frying pan & add to chicken.Remove all but 2 tbsp. fat from the pan. Add the flour & stir well.
Add stock, boquet garni, wine, salt & pepper. Stir & pour over chicken. Cover & simmer 30 min. Add the red wine vinegar. Degrease the sauce before using.
