1 1/2 pounds pork tenderloin, cut into 2
inch strips
1 onion, coarsely chopped
1 red bell pepper, coarsely chopped
3 (15 ounce) cans black beans
1 (16 ounce) jar salsa (any spiciness level you prefer)
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon ground cumin
2 teaspoons chili powder
1 teaspoon salt

1. Combine pork tenderloin, onion, red pepper, black beans, salsa, chicken broth, oregano, cumin, salt, and chili powder in a slow cooker. Set to Low and cook for 8 to 10 hours.
2. Break up pieces of cooked pork to thicken the chili before serving.

I make this for the New Year's Eve party at Kerri and Trav's every year. SO good. Provide sour cream as a garnish. This is good on rice or a baked potato too. Tabasco adds a little more fire if needed -- just let people spice up their own servings as much as they want.

If you have a large crock pot, you can easily double the recipe.
