Ingredients: Cake: 1-2/3 c all-purpose flour 1-1/2 c white sugar 2/3 c unsweetened cocoa powder 1-1/2 tsp salt 1-1/2 c buttermilk 1/2 c shortening 2 eggs 1 tsp vanilla 1/2 c Kirschwasser
Filling: 2 (15-oz) cans dark sweet pitted cherries in heavy syrup 1/4 c Kirschwasser 2 tbsp cornstarch
Frosting: 1 lb confectioners' sugar 1/2 c unsweetened cocoa powder 1 lb butter, at room temperature 1-1/2 tsp pure vanilla extract 1/3 c boiling water
Topping and Garnish: 1-1/2 c heavy cream 2 tsp sugar 3 oz semisweet chocolate, shaved

Directions:Make cake: 1. Preheat oven to 350ºF. 2. Grease the bottom of two 8" round pans. 3. Sift and mix together flour, cocoa, baking soda and 1 tsp salt; set aside. 4. Cream shortening and sugar until light and fluffy. 5. Add eggs and beat well. Add vanilla. 6. Add flour mixture, alternating with milk, beat until combined. 7. Pour into two cake pans. 8. Bake for 35-40 minutes or until toothpick inserted into the cake comes out clean. 9. Cut each layer in half horizontally, making four layers total. 10. Sprinkle layers with 1/2 c Kirschwasser.
Make filling: 1. In a saucepan over medium heat, bring the cherries to a boil in their syrup. 2. In a small bowl, dissolve the cornstarch in the Kirschwasser and add to the cherry mixture. 3. Whisk until it thickens, about 2 minutes. 4. Remove from the heat and cool completely.
Make frosting: 1. Sift together the confectioners' sugar and cocoa powder into a medium size bowl. 2. Add the butter and mix with an electric mixer until incorporated. 3. Add 1 tsp of the vanilla and the boiling water. Mix until smooth. 4. Set aside and let cool.
Topping: 1. In a separate bowl, combine the cream, the remaining 1/2 tsp vanilla, and the sugar in a medium size bowl. Using an electric mixer, whip until soft peaks form. Set aside.
Assemble cake. 1. Spread each layer (not the top!) with the cooled cherry mixture. 2. Ice the sides of the cake with the frosting. 3. Spread the whipped cream mixture on the top of the cake. Garnish with chocolate shavings. |
