15 oz Box Raisin Bran
1 ½ C Oats
5 C Flour (or 3 C whole wheat and 2 C unbleached)
2 C Sugar
2 C Brown Sugar
1 C Chopped Pecans (can use wheat germ)
1 Tbs. Baking Powder
1 Tbs. Baking Soda
1 Tbs Salt
1 tsp Cinnamon
1 tsp Allspice
1 tsp Nutmeg
3 Small Ripe Bananas Mashed
1 C Apple sauce (canned pumpkin is also a good substitute)
1 C Melted margarine
4 Eggs
1 qt Buttermilk

Mix dry ingredients together and mix together with the buttermilk and eggs and margarine and fruit. Spray muffin pans with Pam and bake at 350º until done ~15 min but time depends on the size of the muffins - regular or mini-size.

I got this from my friend, Jean Griffith. It makes a huge batch for the freezer. It is easy to play with too. I like to substitute pumpkin for the apple sauce for a change or if I don't have any on hand.
