1 9 inch unbaked pie crust
3 cups chopped rhubarb
1 egg – beaten
1 cup cultured sour cream
3 Tablespoons Minute Tapioca
1 1/3 cup sugar
Pinch of salt
¼ teaspoon cinnamon
½ teaspoon cinnamon/1 tablespoon sugar mix to sprinkle on top

Directions:
Directions:
Mix beaten egg and sour cream together. Add combined sugar, salt, cinnamon and tapioca. Fill pie crust shell with rhubarb. Pour sour cream mixture over rhubarb. Sprinkle with sugar/cinnamon mixture.
Bake in 450 degree oven for 15 minutes. Reduce temp to 350 degrees and bake 30 – 40 minutes more.
