Nonstick olive oil cooking spray
3 Tbsp. seasoned dry bread crumbs
2 Tbsp. grated Paremsan cheese
1 egg white
1 Tsp. 2% milk
2 Zucchini cut lengthwise into quarters
1/3 cup Spagheti sauce or Ranch dressing

Directions:
Directions:
1. Preheat oven to 400º
2. Spray baking sheet with cooking spray and set aside.
3. Combine bread crumbs and Parmesan cheese into a shallow dish.
4. Combine egg white and milk in a seperate shallow dish and beat with a fork until well blended.
5. Dip each zucchini wedge into the crumb mixture and then into the egg mixture.
6. Roll in the crumb mixture a second time.
7. Place zucchini sticks on the baking sheet.
8. Coat well with the cooking spray.
9. Bake 15-18 minutes or until golden brown.
10. Serve with spaghetti sauce or ranch dressing for dipping.

These are great weekend snacks between lunch and dinner. We especially like them when we are watching weekend sports with Dad. AND- they're good for diabetics, too! They are REALLY tasty when they first come out of the oven. We're split on which tastes better,though- Ranch or Spaghetti Sauce!
