1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 t oregano
3 cloves garlic, crushed
4 lb pork tenderloin, cut into 1 inch cubes
2 medium onions, cut into 1 inch cubes
2 green (yellow, red or orange) peppers, cut into 1 inch cubes

In a large bowl mix together the lemon juice, olive oil, soy sauce, oregano and garlic. Add pork, onion, and green pepper - stir to coat. Cover and refrigerate 2-3 hours. Preheat grill. Thread pork, onion, and peppers on to skewers. Lightly oil grill. Cook 10-15 minutes.

Use a very tender cut of pork for this Greek-style grilled entree. Marinate pork, onion, and green pepper in an aromatic melange of lemon, olive oil, soy sauce, garlic and oregano. Thread onto skewers and grill. This meat is most tender if you can marinate overnight. Use different colors of peppers for presentation - there will NOT be leftovers!
