3 cups cold mashed sweet potatoes ( or 2 extra large cans of sweet potatoes, drained)
1 cup sugar
1/2 cup milk
1/4 cut butter or margarine (softened)
3 eggs
1 teas salt
1 teas vanilla extract

Topping: 1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tbls cold butter or margarine
1/4 cup flour

Directions:
Directions:
In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth. Transfer to a greased 2 quart baking dish. In a small bowl, combine brown sugar, pecans and flour, cut in butter til crumbly. Sprinkle over potato mixture. Bake uncovered at 325 for 45-50 minutes or until golden brown. Makes 8-10 servings

For holidays I use 3 of the extra large cans of sweet potatoes with the rest of the ingredients the same and cook in a 9x13 pan.
