2 1/2 C. flour
1 C. sugar
1 tsp. baking powder
1 tsp cinnamon
1/2 tsp nutmeg
pinch of : ginger, cloves, salt
2 eggs
1/2 C. pumpkin puree'
1tsp vanilla

sift dry ingredients together
in another bowl whisk wet ingredients
pour pumpkin mix into flour mix
give a rough stir (dough will be crumbly)
flour hands
lightly knead dough
lightly grease a baking sheet or line it with parch. paper
form dough into large log only about 1/2 inch high
bake for about 22-30 min at 350º until center is firm to touch. cool for 15 min.
cut with a serrated knife 1 inch thick
bake again for 15-20 min. at 300º
cool completely

Jazz these up by melting bakers' chocolate and dipping one side of the biscotti. Even sprinkle with nuts too. You can do many variations! :)
