1 15 oz. Whole Ricotta cheese
4 eggs
1 1/2 C. flour
1/2 C. Sugar
1 T. Vanilla
2 T. baking powder
1/2 tsp. salt
cooking oil for frying
sifted powdered sugar, regular sugar or cinnamon sugar for garnishing

In a large bowl beat ricotta cheese w electric mixer on med. speed until smooth. Add eggs and vanilla beat until combined. Add flour, 1/2 C. of sugar, baking powder and salt. beat on low until combined. Let batter stand for 30 min. Drop batter by well rounded tsp or pastry scoop 5 at a time into hot oil (registering at 365º) cook 2 1/2 to 3 min or until golden brown turning once remove with slotted spoon & drain on paper towels. cool completely. put doughnuts in a bag with your desired sugar and shake so they are completely coated.
