2 lb. lean hamburger meat
3/4 c. chopped green bell pepper
3/4 c. chopped onion
1/2 sleeve Ritz crackers
16 oz. can tomato sauce
1 egg
8 oz. block Colby or Colby-Jack cheese

Directions:
Preheat oven to 350º. Set aside the cheese and half the tomato sauce. Mix all other ingredients in a bowl. Shape into a ball and divide into two halves. Place half the meat in the pan you will use to cook the meatloaf. Flatten this half of the meat and shape into a square. Slice the cheese into 1 inch thick slices and layer it on top of the meat that is in the pan. Flatten the second half of the meat and layer it over the cheese. Seal all the edges so that no cheese is showing. Pour the remaining tomato sauce over the meat. Place it in the oven and cook for 45 minutes.
