10-12 small yellow crooked neck squash
2 lb. hamburger meat
1 small onion, chopped
1 tbsp. Italian seasoning
1 c. uncooked instant rice
1 large can tomato juice
1 large can diced tomatoes
salt and pepper to taste

Directions:
Cut the neck off of the squash, slice up, and save. Scoop out the insides of the squash and discard. Mix ground meat, onion, Italian seasoning and uncooked rice. Stuff the meat mixture into the squash (You will have some meat left over.). In a large pot, put tomato juice, diced tomatoes, sliced necks of the squash, and stuffed squash. Make the additional meat into meatballs and add to this mixture. Add salt and pepper to taste. Cook slow for about 1 to 1 1/2 hours. It can also be cooked in a crock pot on low for about 3 or 4 hours. this makes a large pot full, so you may want to half the recipe. It is also much better if cooked one day and eaten the next; it gives the mixture time to absorb the flavor.

Prepared spaghetti sauce can be used in place of the tomato juice and Italian seasoning; however, the spaghetti sauce does give it a little sweeter taste.
