2/3 c. margarine
2/3 c. all-purpose flour
7 c. milk
4 large baking potatoes (baked, cooled, peeled and cubed)
4 green onions, chopped
12 bacon strips (cooked crisp and crumbed, can use bacon bits)
1 1/4 c. shredded cheddar cheese
1 c. sour cream
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
In a big pot, melt butter. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly until thickened. This step can take 20 minutes to start thickening. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Add bacon, cheese, sour cream, salt and pepper and stir until cheese is melted.
