3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
Powdered sugar
6 oz. pkg. cream cheese, softened
5 tbsp. butter, softened
1/2 tsp. vanilla extract
1/2 c. chopped pecans

Beat eggs in bowl at medium speed of electric mixer for 5 minutes. Add sugar, pumpkin, and lemon juice gradually. Mix next 5 ingredients; fold into pumpkin mixture. Line jelly roll pan with waxed paper. Pour batter in pan. Bake at 350º for 15 minutes. Invert on towel sprinkled with powdered sugar. Roll cake and towel together as for jelly roll. Cool completely. Combine cream cheese, 1 cup powdered sugar, butter and vanilla in bowl; mix well. Stir in pecans. Spread on cake. Re-roll. Refrigerate (or freeze) until serving time.
